Anyone know how to make a good apricot chicken pizza?

Should I soak the chicken in the apricot juice or something. I've made tonnes of pizzas before so the dough and everything is no problem, just need to know what the deal with apricots and chicken is.Anyone know how to make a good apricot chicken pizza?

APRICOT CHICKEN DIVINE



2 tbsp. butter

2 tbsp. olive oil

8 skineed chicken breast halves

1/2 c. white flour

1 tsp. salt

1/2 c. apricot preserves

1 tbsp. dijon mustard

1/2 c. plain yogurt

1 tbsp. slivered almonds



Preheat oven to 375 degrees. Melt butter with oil in a shallow baking pan. Meanwhile, shake chicken in a plastic bag filled with flour and salt until chicken is coated. Place chicken in a single layer in the baking pan and bake for 25 minutes. Combine apricot preserves, mustard and yogurt. Spread apricot mixture on chicken and bake for 30 minutes more or until done. Just before serving, brown almonds lightly in toaster oven. Sprinkle almonds over chicken and serve over rice. Serves 8.
I found a super easy-sounding recipe for apricot chicken that you could try...then make your pizza with it!



Apricot Chicken



2 (12 ounce) jars apricot preserves

8 ounces Dijon mustard

3 lbs boneless skinless chicken breasts



Preheat oven to 350 degrees.

Combine in a large bowl, preserves and mustard.

(for less spicier recipe use less mustard and for spicier, use more mustard.) Cut chicken breasts into 2 inch wide strips and put in apricot mixture.

Generously coat the chicken.

Place chicken into baking dish.

Cover with remaining sauce.

Cook for about 45 minutes.

Apricot Chicken Recipe



Ingredients



- 1 tablespoon butter

- 1 tablespoon olive oil

- 4 boneless skinless chicken breasts

- 1/4 cup red onion - chopped fine

- 2 cloves garlic - chopped fine

salt and pepper to taste

- 1 cup apricot nectar

- 1 cup chicken stock

- 2 tablespoons arpicot jam

- 10 dried apricots, quartered

- 1 chipotle chile in adobo sauce - chopped fine

- 2 tablespoons unsalted butter to finish sauce



Container: large skillet and serving platter

Servings: 4

Serving Description: 1 chicken breast and 1/2 cup rice

Prep Time: 30 minutes

Cook Time: 20 minutes





Directions



CHICKEN:

Heat large skillet over medium heat, heat the batter and oil.

Season the chicken with salt and pepper and add to the skillet.

Cook until browned on all sides, approximately 4 minutes each side depending on how thick, or until no longer pink in the middle.

Transfer to a dish to keep warm in the oven while making sauce.



SAUCE:

In the same skillet, add the onion and cook until tender, approximately 5 minutes.

Add garlic and cook one more minute.

Add nectar, chicken stock, jam and dried apricots.

Bring to a boil and cook down until reduced by half, approximately 10 mintues.

Add chipotle and stir to combine.

Reduce the heat and add butter.

Return the chicken to the skillet with the juices.

Turn pieces to coat with sauce.

Serve with basmati and wild rice with chicken on top and a few spoonfuls of sauce over the top.
i wondering is it apricot taste good?

pineapple with chicken pizza more tasty, I think!!! if you prefer your style, it is alright... i would suggest refer to cook book is more accurate!!! at least will not go wrong!!!
